Our starter culture was originally established by us, and has since been combined with another starter that we acquired directly from a farmer and miller in Sautron, France. We also use our fresh, stone-milled flour (also available in the shop) in the “feeding” of our starter. Our starter has been carefully maintained since 2010.
Includes at least 10g of dehydrated starter, and detailed rehydration instructions— ready to “wake up” at your convenience! Once activated, the starter culture will become lively and bubbly, and can be ready to use in as little as 48 hours.
